Special K

Yesterday I started the 'Special K' diet. This involves having Special K cereal for breakfast and lunch, then a normal (but healthy!) dinner. I'm planning on keeping this up for a couple of weeks in the hope of kicking starting my weight loss. Then I can start having slightly more interesting meals!

It's not the most exciting diet in the world, but fairly easy to stick to cos it doesn't require a great deal of planning. Meal planning isn't one of my strong points so a menu of cereal and then more cereal is right up my street!

Dinner last night was a ham salad wrap, with extra salad. I thought I'd be really hungry, but I drank lots of water, and kept myself topped up with a few pieces of fruit though the day (I'm sure that's allowed, isn't it? My diet my rules ... Ha ha ha!!)

It was an altogether rather healthy day yesterday. Today I've again managed to stick to the Special K, drank lots of water, and snacked on fruit. Dinner isn't quite so healthy ... Chicken curry tonight. Must be strict with the portion size though. I love curry ... Must not eat too much, must not eat too much, must not eat too much ... ( if I keep repeating it to myself I might manage it!!)

So the will power has stayed with me for two days (almost) and I have high hopes for tomorrow. Then we'll see what temptations the weekend will bring.

Wild Rice Salad

I love rice salads. You can add all sorts to them, use any old dressing and end up with a great lunch.

This is my, slightly haphazard, recipe.  There are no measurements, you can bung as much or as little as you want of everything in. I usually make up a big tub full, which will last for a few days in the fridge in a sealed container.

Ingredients:
  Wild / long grain rice
  Red onion
  Tomatoes
  Peppers
  Olive oil
  Balsamic vinegar
  Dijon mustard
  Ground black pepper
 

  1. Cook and drain the rice, then rinse in cold water.  Leave to cool.
  2. Make the dressing by mixing together 2 parts olive oil, 1 part balsamic vinegar and 1 part dijon mustard. Then add some ground black pepper.
  3. Once the rice is completely cool, stir in the dressing.
  4. Chop the onion, tomatoes and peppers and stir them in too.
And that's it, easy. The hardest bit will be not scoffing the lot in one go!

You could add all sorts of yummy things to this recipe ... chicken, bacon, chorizo, spring onion, cucumber, olives etc. Whatever's lurking in fridge ... bung it in.

Here I go with my wafflings!

I'm blogging in the vague hope that it will help me with dieting. I have at least two stones to lose and have done for years.

I know exactly what I should be doing to lose weight, I just find it so incredibly hard to stick to the whole 'being good' thing. I love eating, I love food ... particularly the bad for you stuff. The more I think about not snacking, the more I want to snack. The more I think about having a nice sensibly-sized salad, the more I crave a lovely big burger. And it's just so difficult not to give into the cravings!

If anyone invents some sort of willpower pill I'll be first in the queue.

In the absence of willpower pills I'm planning on blogging instead of snacking ... that should work. No calories in blogging!
